TABOULI (TABBOULEH) SALAD

Ingredients

¾ cup bulger wheat, cooked to package directions

1 cup parsley leaves, finely chopped

¼ cup mint leaves, finely chopped

¾ cup tomatoes, seeded and diced

¾ cup English cucumber, diced

½ cup scallions, chopped

⅓ cup olive oil

4 tablespoons lemon juice

1 teaspoon Dijon mustard

1 teaspoon salt

½ teaspoon black pepper

Instructions

Combine the bulger wheat, parsley, mint, tomatoes, cucumber, and scallions in a large bowl and toss to combine.

Combine the olive oil, lemon juice, mustard, salt, and pepper in a small jar and shake vigorously until emulsified.  Pour the dressing over the salad and toss until the salad is fully coated with the dressing.  Serve cold or at room temperature.

Note – this salad is also delicious with festa cheese, olives, or you can add a can of your favorite beans (drained and rinsed).
