BANANA CRANBERRY WALNUT BREAD

Ingredients

4 very ripe bananas, mashed with a fork (about 1 heaping cup)

4 tablespoons butter, melted

2 eggs

⅓ cup orange juice

1 teaspoon vanilla

1 cup sugar

2 cups flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

1 teaspoon salt

1 cup whole fresh cranberries

½ cup chopped walnuts

 

Instructions

Preheat the oven to 350 degrees.  Coat a loaf pan with non-stick spray.

Combine the mashed bananas, butter, eggs, orange juice, and vanilla in a large bowl and mix well to combine.  Stir in the sugar.

Combine the flour, baking powder, baking soda, and salt in another bowl and whisk to combine.

Take ½ cup of the flour mixture and combine with the cranberries and walnuts in another bowl.  Toss to coat.

Add the remaining flour mixture to the wet ingredients and stir until just combined. Fold the cranberries and walnuts with flour into the batter until everything is just combined and evenly distributed.

Pour the batter into the prepared loaf pan.

Bake for 45-55 minutes until a knife inserted in the center come out clean.  Cool for 20-30 minutes and turn the bread onto a plate.  Slice and devour!
