SESAME CHICKEN BITES WITH SPICY DIP

 

2 Tbs. rice wine vinegar

2 Tbs. dark sesame oil

1 Tbs. garlic, chopped

2 Tbs. soy sauce

2 boneless chicken breast halves (about 1.5-2 lbs.)

¼ cup white sesame seeds

¼ cup black sesame seeds

¾ cup corn starch

Peanut oil for frying

Approx. 48 fresh snow peas (ends and strings removed)

 

Chili dip

1 Tbs. rice wine vinegar

2 Tbs. Thai chili sauce

1 Tbs. soy sauce

1 tsp. sesame oil

2 tsp. fresh gingerroot, minced or grated on a microplane

¾ cup Hellmann’s light mayonnaise

1 Tbs. brown sugar

 

In a medium bowl combine the first 4 ingredients to create a marinade.  Cut chicken into bite size chunks and add to the marinade.  Cover and refrigerate overnight.

 

Mix sesame seeds and cornstarch in a shallow baking dish.  Heat ½” peanut oil in a large frying pan over low-medium heat.  Dip marinated chicken pieces in the sesame mixture to coat.  Place in frying pan in small batches and brown on all sides.  Remove from pan and drain on paper towels.

 

Steam snow peas in a small pot of boiling water for approx. 1 minute until bright green.  Remove and cool in ice water to stop cooking.  Wrap one snow pea around each piece of chicken and fasten with a toothpick.

 

Mix all dip ingredients together with a wire whisk until combined.

 

Serve dip in a hollowed out red pepper surrounded by chicken.  MMMMMMMMM!
