PEANUT BUTTER COOKIES

Ingredients

1 cup smooth peanut butter

1 cup shortening

1 cup brown sugar, packed

1 cup sugar

2 eggs

2 teaspoons vanilla

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

Instructions

Preheat oven to 350 degrees.

Cream the peanut butter, shortening, and butter with the sugars using the back of a large spoon until everything is fully incorporated.

Add the eggs and vanilla and mix until combined.

Add the flour, baking soda and salt and mix until full incorporated.

Roll the dough into 1 ½” balls and place 3” apart on greased baking sheets.  Press each ball down with the tines of a fork in a criss cross pattern.

Bake for 10-12 minutes until lightly browned.  Let cool for 5 minutes before removing to wire racks.
