THE BEST ASIAN CHICKEN MARINADE
Ingredients
The Marinade:
2 tablespoons brown sugar
1 tablespoon corn starch
1 teaspoon baking soda
1 tablespoon sesame oil
2 tablespoons oyster sauce
2 tablespoons rice wine vinegar
¼ cup soy sauce
1 tablespoon honey
2 teaspoons Dish off the Block Ragin’ Cajun Spice Blend
4 cloves garlic, chopped
2-3 pounds boneless, skinless chicken thighs (or breasts, but I love the thighs here!)
Instructions
Combine all of the marinade ingredients in a medium bowl and whisk to combine. Add the chicken to the bowl and toss so that they are all completely covered and immersed in the marinade (this can also be done in a ziplock bag). Refrigerate for at least 1 hour up to overnight. Remove from the fridge 1 hour before cooking so the chicken can come to room temperature.
Preheat your grill to 400-425 degrees. Place the chicken thighs on the hot grill, letting any excess marinade drip back into the bowl. While the chicken cooks on the first side, microwave the remaining marinade in the bowl for 3 minutes before basting (this will cook any raw chicken juices).
Cook the thighs until well seared on the first side for 3-4 minutes. Flip and cook for 2 minutes on the second side. Baste the chicken all over with the remaining marinade and cook for 2-3 minutes more until just cooked through.
Serve over rice with your favorite veg. DEVOUR!
