CINNAMON SWIRL BANANA BREAD

Ingredients

The Batter:

4 very ripe bananas (the browner the better!)

1 cup sugar

1 cup butter, melted

2 eggs

1 tablespoon vanilla

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

 

The Swirl:

2 tablespoons butter, melted

3 tablespoons sugar

3 tablespoons brown sugar, packed

2 teaspoons cinnamon

Instructions

Preheat oven to 350 degrees.  Coat a loaf pan with non-stick spray.

Mash the bananas in a large bowl with a fork so they are mostly smooth with a few lumps.  Add the sugar, butter, egg, and vanilla to the bowl and mix well to combine.  Add the flour, baking soda, and salt to the bowl and mix well until a batter forms.

Spread about ⅓ of the batter in the bottom of the prepared pan.  Top with about ⅓ of the swirl and ‘swirl’ it into the batter from edge to edge of the pan with the tip of a steak knife.  Do not overmix.  Top with another ⅓ of the batter and repeat with the swirl mix.  Finish with the rest of the batter and the rest of the swirl.

Bake for 50 minutes to 1 hour until a tester in the center comes out clean.  Let cool for 30 minutes.  Remove from the pan, slice, and devour!!
