TURKEY QUESADILLAS WITH FRESH SALSA

 

Salsa:

1 pint cherry or grape tomatoes, quartered

¼ cup sweet onion, chopped

1 jalapeno, seeded and minced

3 Tbs. cilantro, chopped

½ tsp. cumin

2 tsp sugar

salt and pepper, to taste

2 Tbs. olive oil

juice of one large lime

 

2 Tbs. olive oil

4, 8” flour tortillas

2 cups shredded cheddar cheese

2 cups cooked turkey meat, shredded

 

 

Combine all of the salsa ingredients in a small bowl and set aside.

 

Heat oil in a large skillet.  Add one tortilla and layer ¼ cup cheese, ½ cup of turkey meat followed by about 1/3 cup salsa and another ¼ cup cheese.  Cover and cook for 3 minutes until cheese is melted.  Add another tortilla on top and press to adhere.  Flip and cook one more minute until browned on the other side.  Cut into wedges and serve hot with extra salsa and sour cream.
