CREAMY MAC AND CHEESE


1 lb. elbow macaroni

3 Tbs. butter

3 Tbs. flour

2 1/2 cups milk

1/2 tsp. salt

1/8 tsp. pepper

1/4 cup onion, minced

2 cups shredded Cheddar cheese

2 cups Velveeta Cheese diced

Preheat oven to 350°. Cook elbows according to package directions.

 

Make a rue from butter and flour. Slowly add milk until sauce thickens. Add salt, pepper, onion, and cheeses. Stir until smooth.

 

Add cheese sauce to elbows and pour mixture into greased, 2-qt. casserole dish.

 

Bake for 30 minutes. Serves 4.
