PAM’S “HOT TO TROT" GAME DAY CHILI

 

3 Tbs. olive oil

2 medium-large onions, chopped

1 jalapeno, chopped fine including seeds

3  lbs. lean ground beef or turkey burger

3 Tbs. Cajun seasoning (recipe below or use your favorite blend)

3 Tbs. chili powder

3 tsp. cumin

3 Tbs. brown sugar

1, 28 oz. can ground, peeled tomatoes (or crushed)

1, 14 oz. can diced tomatoes

1, 19 oz. can red kidney beans

1, 19 oz. can cannellini beans

½ cup water

 

In a large chicken fryer or Dutch oven, sauté onions in olive oil until they begin to get soft.  Add hamburger and continue to sauté until completely browned.  Add the remaining ingredients in order and cook, covered on low heat for 30 minutes.

 

Serve topped with shredded cheddar cheese and corn bread on the side!

 

CAJUN SPICE MIX

 

1/4 cup salt

2 Tbs. cayenne pepper

2 Tbs. paprika

1 1/2 Tbs. onion powder

1 Tbs. freshly ground black pepper

1 Tbs. freshly ground white pepper

1 Tbs. garlic powder

2 tsp. dried basil

1 tsp. chili powder

1/4 tsp. dried thyme

1/4 tsp. ground mustard

1/8 tsp. ground cloves

 

Combine all ingredients in a small jar.  This spice mix can be stored in a tightly covered glass jar in a cool dry place out of direct light for up to 4 months.  Makes about 3/4 cup.

 

This recipe was featured in the September 1993 issue of "Eating Well" magazine.  It is the best blackened seasoning recipe I have ever tasted.
